Summer is just around the corner. This means sunshine, beach and tropical fruits.
One of our best selling candles is the Be Enlightened "Tropical Coconut" scent.
It makes us think of summer and pina coladas.
As with most drinks recipes, there are a number of variations of pina colada recipes:
Martha Stewart's recipe:
Ingredients

2 cups fresh or canned pineapple juice
·
3/4 cup of coconut cream
·
1 cup light rum
·
3 cups crushed ice
·
4 fresh pineapple spears, for garnish
Directions
Combine all ingredients except garnish in a blender.
Pour into tumblers, garnish with pineapple spears, and serve immediately.
With the rum omitted, this is perfect for children.
Or if you want extra kick:
Ingredients
375 ml (1.5 cups) chilled pineapple juice
50 ml (1 cup) coconut milk
80 ml (1/3) cup Malibu coconut liqueur
60 ml (1/4) cup Midori liqueur
60 ml (1/4 cup) fresh lime juice
2 cups crushed ice
Directions
Place everything in a blander and blend until combined.
Pour into glasses to serve.
More tips:
1. You may want to add a couple of tablespoons of finely chopped palm sugar for those with a sweet tooth.
2. Alternatively, a touch of lime juice will help to reduce sweetness.
3. Garnishes can be any tropical fruit - cherries, orange, coconut or pineapple pieces to name a few.
4. Serve in a scooped out coconut for an extra authentic look.
